Chilaquiles

Duration time: 35 minutes. Introduction: Chilaquiles is a simple breakfast dish. It makes use of tortilla chips. The tortilla chips are cooked with cheese and salsa. It is a sure way of enjoying yourself. Don’t wait, go and try it. Ingredients Vegetable oil Corn tortillas Chopped onions Salsa Enchilada sauce Mild cheddar cheese Pickled jalapenos Sour cream Avocados Procedure: 1. Preheat the oven to about 180oC 2. Place a cooking pan on the heat source and pour vegetable oil to the cooking pan. 3. Heat the oil using high heat for about 4 minutes 4. Put the tortilla strips into the hot oil. Turn them sideways until they become golden brown. 5. Remove the golden brown tortilla strips from the cooking pan 6. Place them on paper towels in order to drain the excess fats 7. Remove all the oil from the cooking pan and leave about one tablespoon of it 8. Add onions to the pan; cook them for about 3 minutes until they become tender 9. Put the enchilada sauce and salsa to the pan and stir 10. Heat them until they boil 11. Reduce the heat to low levels to allow for slow cooking. 12. Put tortillas in layers in ungreased baking dish 13. Cover half of the dish with cheese and the other half with salsa mixture 14. Bake them for quarter an hour until all cheese has melted 15. Top up using sour cream, avocados and the jalapenos just before serving. You can now enjoy your meal. Note: The frying step can be eliminated by using tortilla chips instead of the tortilla strips.
