Recipe for cardamom ice cream
Introduction:
From a well prepared cardamom ice cream, you can get ice cream which is sweet smelling with the gentle flavors of the cardamom pod. In order to get the best flavor, it is best to use the whole cardamom pods. The origins of this recipe can be traced back from the Indians.
Ingredients:
Cardamom pods
Cream
Egg yolks
Sugar
Enough caster sugar for sprinkling purposes
Chocolate
Procedure:
1. Switch the power on and preheat the oven up to about 180oC.
2. Crack the cardamom pods and place them in the source pan which has the cream.
3. Bring the source pan containing the two mixtures to a source of heat.
4. Heat the mixture to the boiling point.
5. Remove the mixture from the source of heat and then allow them to cool.
6. Once the mixture has cooled, strain the pods from the mixture
7. In a separate bowl, crash eggs and sugar together and mix them.
8. Mix the two mixtures together – eggs and cream together.
9. Stir the two together until it has formed into a thick substance- this can take some minutes
10. Pour the new formed mixture into ramekins.
11. Pour cold water into an oven proof dish at a height of about 3 cm.
12. Place the ramekins into the dish.
13. For about half an hour, put the cream mixture into the oven and then bake it.
14. Remove the ramekins from the oven dish and give them some time to cool off.
15. After cooling off, place the ramekins into the refrigerator
16. Allow them to stay there for an overnight.
17. Sprinkle the castor sugar before serving over each of the ramekin
18. You can also dust with cocoa or shaved dark chocolate for garnish if you like.
19. Caramelize them under the grill
20. You are now ready; you can serve yourself or your guests.
Note:
It is important when preparing not to add too much cardamom since it is a strong flavor and too much of it can cause a taste which is not that good.
