Recipe for baked lychee chicken: If you are the type of people who are tired or do not enjoy dry and dull baked chicken, you should then try litchi chicken. It’s a gravy recipe and the fruitiness of litchi makes it the perfect match for an ice cream and also most importantly the chicken. The lychee acts as a fruity marinade. Ingredients: Chicken thighs A can of lychee: It can either be smashed or cut up. Salt Sugar Ginger Soy sauce Tablespoon of mirin Garlic crushed fresh thyme Fresh parsley Vegetable oil Balsamic vinegar Cinnamon Salt and pepper for seasoning Procedure: 1. Chop up the lychee; bash the can for it to release the content 2. Place the lychee in a bowl 3. Add to the bowl sugar, salt, ginger, mirin and soy sauce. 4. Place your chicken pieces in a freezer bag or a plastic container depending on what is available. 5. Pour the smashed up lychee marinade on top. 6. You can place in a shallow pan incase the freezer bag is leaking. 7. Marinate in the refrigerator for about six to eight hours. 8. After eight hours remove from the fridge 9. Preheat the oven to about 180oc 10. Heat the oil pan over medium heat and brown the chicken on each side. 11. Remove the chicken from the pan after it has achieved the level of browning you want 12. For the couscous, place the couscous in a mixing bowl 13. Add boiling water until it is just covered. 14. Cover it with a tight lid and allow it to sit for about 10 -15 minutes 15. Season and mix in the spring onion. 16. Bake uncovered for 35 minutes turning constantly 17. Switch off the oven and remove the chicken. 18. Scoop out the chicken juice 19. Return the chicken in the oven to keep warm. 20. Serve hot with mashed potato or grilled vegetable salad Enjoy your meal.
